Will Webb Here are the photos of my first successful batch of gluten-free, vegan cupcakes: chocolate with Crown Royal mesquite smoked whiskey frosting. I melted food grade pure cocoa butter and used for the fat in the cake batter. I usually use Zulka dried sugar cane instead of refined sugar in my baking and it happens to be vegan, so I didn’t even have to buy a different sugar. Wholesome organic powdered sugar is vegan, so making vegan frosting is easy, too. I missed the butter in the frosting - cause I ❤️❤️❤️❤️❤️ butter, but I used nonhydrogenated palm oil for the frosting and added a tiny bit of vanilla to enhance the whiskey. No one could even tell these cupcakes were vegan.
They look worthy to be sold at a bakery. Excellent work! Where can I buy them?

Thank you, Geri L ! I’ve been experimenting with vegan baking (which for me also has to be gluten-free) without too much success until this week. I’m happy with these cupcakes! I’m not vegan, but in the course of my work I have vegans who ask me questions about adapting gluten-free recipes to suit a vegan diet. For just cooking I can answer these questions. For baking I’ve not been able to. But also just for the breadth and depth of knowledge I want to be able to make delicious vegan desserts and breads. #whenimnotrunningimbaking
