Even tougher route than it looks.
Stop at La Gargantuan Hotel/Restaurant in el Chorro (just opposite the train station car park. There are seats outside out the back that have amazing views back up the gorge. They do great breakfasts and the Chorizo Molletes are a must!.
Steep rolling hills all the way from El Chorro to Villanueva de la Concepcion and then a long climb all the way to El Torcal. Worth going up to the top of El Torcal if there is time. A steep climb all the way up. Continue to the visitors centre (they sell ice creams :) and go and have a look at the viewing from the viewing platform to the left (at the end of a short 50m track opposite the visitors centre).
The roads are in great condition for most of this route. There are a few small 30-40m patches between Valle de Abdalajis and La Joya that need repair but nothing to worry about.
